Over 200 years ago, the German naturalist "Peter Simon Pallas" discovered the cedar nut on his research journeys. He explored the then still unexplored expanses of Siberia and was a member of the Russian Academy of Sciences. So he wrote a travel report for Tsarin "Catherine the Great", in which he enthusiastically reports about the seeds of the cedars.
The high nutritional value of cedar nuts lies in the fats contained (around 90% unsaturated fatty acids, pinolenic acid), proteins (high proportion of essential amino acids) and a number of vital substances. Cedar nuts are also rich in iron, magnesium and trace elements such as manganese, copper, zinc and cobalt. Also included are many vitamins, especially those of the E and B group. Exceptionally high content of the cedar nuts is of phospholipids (lecithin). The cedar nut is therefore often referred to as the "soy of the north".
Cedar nuts are a very tasty ingredient for salads and smoothies. But they are also an absolute hit!
